One of my not-so-guilty pleasures is a chocolate shake. I love to do a dairy-free version so it fits best with my plant-based eating approach. Though I make shakes many ways, this overnight creamy cashew chocolate shake is my new favorite. And let’s face it … anything chilly is welcome in our way-too-hot summer that we’re having right now.
Luckily, there’s no “giving up” scrumptiousness, creaminess, or anything else with this shake recipe. It’s one of my answers for the definition of “yum!”
What’s in the shake?
The key to this shake’s thick and creamy decadence is nutty, literally. Cashews, to be specific. When soaked overnight in plant-based milk (I use Ripple for this!) they become perfectly blendable. In addition to the nuts and plant-based milk, this overnight creamy cashew chocolate shake features frozen banana and fresh or frozen blueberries for natural sweetness, cocoa powder for chocolatiness (of course!), and pure vanilla extract for tastiness. Pretty simple.
And please adjust ingredient amounts to your own liking, such as if you like extra chocolatiness or prefer a shake that’s not quite as thick.
How to make the shake
To make overnight creamy cashew chocolate shake, all you need to do is freeze the banana slices (I stash them in a silicone pouch), and separately chill the remaining ingredients in a jar in the fridge. You can do this overnight—or for at least six daytime hours. When you’re ready for your shake, everything is ready to go and it takes like 60 seconds from start to finish. A high-powered blender works best, of course!
Is it good for you?
Of course! Nearly anything based on plants offers good-for-you benefits. While it’s rich, it’s an excellent source of healthy fats, plant protein, dietary fiber, calcium, iron, and potassium. And there’s no added sugars. All of the just-right sweetness comes naturally from a combination of banana and blueberries. It’s amazing any which way you slurp it.
Best way to enjoy it
Enjoy this overnight creamy cashew chocolate shake as a power shake, decadent dessert, or big snack (aka mini-meal). And if you prefer the “power shake” route, have it after a workout or athletic event, not before it, for best performance benefits.
