So, this might be my favorite way to eat strawberries right now! In my grilled balsamic strawberries with whipped vanilla cashew pudding dessert, I take peak-season berries and give them a deserving upgrade. They’re tossed in balsamic vinegar, olive oil, and agave or coconut nectar, then grilled until they’re jammy and caramelized. Then they get spooned over a dreamy, creamy whipped vanilla cashew pudding that’s sooo creamy you’ll think there must be lots of rich dairy in it (spoiler: there isn’t any). It somehow feels indulgent and refreshing at the same time … sweet, tangy, warm, and cool, all in one bite.

How to make?

Here’s the best part: it’s way easier than it sounds. Soak your cashews, blend them up with plant milk, agave or coconut nectar, vanilla, and a pinch of sea salt, and let the pudding chill while you toss your strawberries in the balsamic mixture.

Onto the grill they go for about three minutes a side (a grill pan works great if you’re indoors), just until they soften and pick up those pretty char marks.strawberries in a grill pan

Layer the warm strawberries over the cool pudding, spoon over any extra balsamic juices from the bowl, and finish with whatever feels fun to you— toasted almonds, a little lemon zest, fresh mint and/or a crack of black pepper (hint: I love all of them)!

How to serve?

Serve it up in dessert dishes or cute glasses (I used sturdy martini glasses!) if you’re feeling fancy. Either way, this one’s the kind of dessert that’s guaranteed to get recipe requests.

Ingredients

Units Scale
  • 1 cup raw cashew pieces
  • 1/4 cup + 2 tablespoons chilled unsweetened plant milk, or as needed
  • 2 1/2 tablespoons agave nectar, coconut nectar, or honey, divided
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon fine sea salt
  • 1 1/2 tablespoons balsamic vinegar
  • 1 teaspoon extra-virgin olive oil
  • 1 pound fresh organic strawberries, hulled & halved
  • Optional: lemon zest, pinch of cracked black pepper, toasted sliced almonds &/or mint leaves

Instructions

  1. Soak cashews in hot water for 15 minutes in a sealed jar. Drain well.
  2. Blend drained cashews with plant milk, 1 1/2 Tbsp of agave nectar, vanilla, and salt until whipped, at least 2 minutes on high speed. Chill or set aside.
  3. In a medium glass or stainless steel mixing bowl, whisk vinegar, olive oil, and remaining 1 Tbsp agave nectar. Add strawberries; toss just until evenly coated.
  4. Heat a grill pan or outdoor grill over medium-high. Add strawberries in a single layer and grill until caramelized and jammy, about 3 minutes per side. Transfer back to the mixing bowl with residual balsamic mixture.
  5. Spoon creamy cashew pudding into dessert dishes (I used sturdy martini glasses!). Top with desired amount of warm grilled strawberries and balsamic juices from bowl, plus optional toppings of choice (try them all!). Serve any remaining grilled strawberries on the side.

Notes

1 cup cashew pieces = 140g/5oz
