  • 5 ounces organic strawberries (about 4 large or 7 small-medium), halved lengthwise
  • 1 1/2 teaspoons extra-virgin olive oil
  • 1 teaspoon balsamic or white/golden balsamic vinegar
  • 1 large Hass avocado, peeled, pitted and diced
  • 2 teaspoons lime juice
  • 1/2 small jalapeño, halved lengthwise, extra-thinly sliced crosswise
  • 1/4 teaspoon + 1/8 teaspoon sea salt, or to taste
  • 1/2 teaspoon ground coriander, or to taste*

Instructions

  1. Preheat a grill pan or outdoor grill on medium-high heat. Brush cut surfaces of the strawberries with the olive oil. Grill just the cut surface of the strawberries until rich grill marks form, about 4 to 5 minutes. (Note: Use skewers if the strawberries are small or tricky to handle.) Brush with the balsamic vinegar and set aside to cool.
  2. When cool enough to handle, dice the grilled strawberries, then drain well of excess liquids using a mesh strainer.
  3. Add all ingredients to a medium bowl. Fold or gently stir to just combine (do not smash ingredients). Taste and adjust seasoning.
  4. Serve at cool room temperature along as a topping for quinoa bowls, veggie tacos, mixed green salad, avocado toast (yes, double avocado!); paired with grilled tofu, tempeh, or black bean burgers; or with organic corn tortilla chips.

Notes

*For best results, pan-toast whole coriander seeds until fragrant, then grind using a peppermill or coffee/spice grinder.
