grilled greek yogurt banana split trio

by Jackie Newgent  |  March 16, 2013  |  5 Comments
Makes 3 servings: 1 banana split each The grilled banana provides an extra special touch in this reinvented banana split. It’s designed to be served as a petite dessert for three. Each person gets one of the flavors—strawberry, chocolate, or almond. Or, if you’re brave, mix-and-match if you don’t mind the double—or triple—dipping! There’s another option, too. If you have an insatiable sweet tooth, you can actually indulge in this dessert for a non-traditional dinner or a weekend breakfast for one. Seriously … dessert for breakfast! It’s good for you, after all. Though this grilled banana delight has a filling 500 calories if you eat all three of them. Any way you decide to enjoy it, this sweet treat is...

zesty lemon bars

(Click on photo for full-size image!) Makes 24 servings: 1 bar each My latest cookbook, 1,000 Low-Calorie Recipes (Wiley, October 2012), has hit the shelves! I’m so excited for you to see it. So this “tasteover” comes to you directly from the pages … giving you a sweet eat to tempt your palate. As for the recipe … I’m sharing these luscious lemony bars with you specifically because one of my culinary class participants requested a better-for-you lemon bar recipe after she was enticed by one she found in Fine Cooking magazine. My version is divine with a just-right amount of butter and no heavy cream. One of the sweet secrets: a mashed banana in the shortbread cookie-style crust. It’s...

fair trade cocoa shake

by Jackie Newgent  |  October 13, 2012  |  1 Comment
(Click on photo for full-size image!) Makes 1 serving: 1 cup each I’m firmly in support of food enjoyment. And that means sometimes you just gotta have dessert! So here’s a shake to make when in need of a chocolate fix (or a chocolate-mint fix!)—any time of the year. It seems super decadent, but it’s actually about half the calories of a traditional shake … and 100% tasty. When whirling it up, be patient with it rather than adding more milk for the thickest, richest-tasting result. It’s a real treat. Kids will love it, too! Calories Saved: 220

double nut butter blondies

by Jackie Newgent  |  July 12, 2012  |  1 Comment
Makes 24 servings: 1 blondie each I crave salty stuff! But occasionally I simply gotta have a sweet treat—a fresh-baked-from-the-oven one. Of course, it’s not in my nature to simply make anything the way it’s supposed to be prepared. So I transformed traditional peanut butter cookies into non-traditional blondie-like bars. I actually tend to savor bars more slowly than cookies–and enjoy them more. How about you? These (exactly!) 100 calorie homemade bites are tastier than the original thanks to extra spices and emphasis on the nuttiness. You’ll find here unrefined peanut oil and pure almond extract, plus a more interesting mixture of two types of nut butters, not just one. But perhaps the most unique ingredient is avocado; it acts like...

dark chocolate black forest torte

by Jackie Newgent  |  February 27, 2012  |  3 Comments
Makes 16 servings: 1 slice each My friend Mo sent me an overly decadent recipe to makeover for her husband’s birthday. Of course, she gives me a dessert recipe that seems quite intimidating. (I’m definitely a cook, not a baker!) But going outside my comfort zone often results in very good things. So baker or no baker, do give this inspired torte a try, too. Black Forest cake is named after Schwarzwälder Kirsch(wasser), a liquor distilled from tart cherries, that has origins in the Black Forest mountain range of southwestern Germany. It’s the most distinctive ingredient in the traditional cake. However, there were no cherries to be found in the “before” recipe; so I added in some cherry goodness …...
