  • 10 ounces short pasta shapes, such as casarecce, cascatelli, or radiatore
  • 3 tablespoons extra-virgin olive oil, divided
  • 1.25 ounces packed thinly sliced lacinato (Tuscan) kale (1.25 oz = 1 cup packed)
  • 1/2 teaspoon + 1/8 teaspoon fine sea salt, divided, or to taste
  • 7 ounces packed broccoli florets (7 oz = 3 cups packed)
  • 1 recipe Rosemary-Pumpkin Salad Dressing (see below)
  • 1.5 ounces thinly sliced sun-dried tomatoes (1.5 oz = 1/3 cup)
  • 1.25 ounces toasted walnuts, roughly chopped (1.25 oz = 1/3 cup)
  • 3 tablespoons shredded or grated vegan Parmesan (optional)
  • Small fresh basil leaves (optional, for garnish)

Instructions

  1. Preheat the oven to 450°F.
  2. Boil pasta in salted water until al dente. Drain, transfer to a medium bowl, drizzle with 2 teaspoons of olive oil, and let stand to cool for 30 minutes. Stir then chill in fridge, if needed, until ready to use in step #5.
  3. Place kale ribbons (slices) in a medium bowl. Toss well (or massage) with 1 teaspoon olive oil and 1/8 teaspoon salt. Let stand for up to 25 minutes.
  4. Meanwhile, toss the broccoli with the remaining 2 tablespoons of olive oil and 1/2 teaspoon of salt. Roast on a rimmed sheet pan at 450°F until well browned (charred) on the edges, about 18 minutes.
  5. Stir creamy dressing into the cool pasta. Then fold in the freshly roasted broccoli (ideally while warm), kale, and sun-dried tomatoes. Adjust salt to taste.
  6. Transfer the pasta salad to a serving bowl. Scatter with walnuts. If desired, sprinkle with the vegan Parmesan and garnish with basil leaves.
  7. Serve pasta salad slightly warm or at room temp. Keeps well up to 4 days in the fridge. Liven up leftovers (if any!) with additional splashes of oil and vinegar.

  • 1 large garlic clove, minced
  • 1/4 teaspoon + 1/8 teaspoon fine sea salt
  • 1 teaspoon finely chopped fresh rosemary

  1. In a blender, puree the pumpkin, olive oil, vinegar, mustard, garlic, and salt until creamy, about 1 minute on high speed.
  2. Add the rosemary and blend until well incorporated, about 10 seconds.
