So, this might be my favorite way to eat strawberries right now! In my grilled balsamic strawberries with whipped vanilla cashew pudding dessert, I take peak-season berries and give them a deserving upgrade. They’re tossed in balsamic vinegar, olive oil, and agave or coconut nectar, then grilled until they’re jammy and caramelized. Then they get spooned over a dreamy, creamy whipped vanilla cashew pudding that’s sooo creamy you’ll think there must be lots of rich dairy in it (spoiler: there isn’t any). It somehow feels indulgent and refreshing at the same time … sweet, tangy, warm, and cool, all in one bite.

I’m a big fan of this vegan vanilla aquafaba whipped cream. This fluffy stuff is kind of like a cross between whipped cream, marshmallow fluff, and meringue. It’s not a superfood, but it is super yum. Whenever I have remaining chickpea canned liquid (which is often, since I make hummus more than most humans), I love finding a good use for it. This is my favorite obsession to make with the liquid (aquafaba) when I need something sweet!

One of my not-so-guilty pleasures is a chocolate shake. I love to do a dairy-free version so it fits best with my plant-based eating approach. Though I make shakes many ways, this overnight creamy cashew chocolate shake is my new favorite. And let’s face it … anything chilly is welcome in our way-too-hot summer that we’re having right now. If you want a really chocolatey dessert (or snack) that makes you feel really healthy, this no-cook plant-based cocoa mousse is my favorite pick right now. It’s based on chickpeas which provide so much nutritional goodness along with velvety creaminess. And the sweetness in this mousse is from dates—making it a no-sugar-added treat. The result is 100% yum.
