This skillet russet & sweet potato hash with arugula pesto is two recipes in one – both of which are tasty on their own, and even better together! It makes a colorful and hearty brunch side dish, but can be served anytime you wish, of course. Pair it with a protein pick, like plant-based sausage or eggs, and it becomes a truly satisfying meal.

cauliflower “hash brown” patties

by Jackie Newgent  |  September 8, 2017  |  2 Comments
I was recently asked by someone with diabetes if I had a lower-carb version of a hash brown patty. I didn’t at that time, but now I do! Here’s the delicious result—-with cauliflower swapped in place of potato. These patties do get nicely browned and a slight bit crisp. (These are not deep fried in order to keep them calorie-friendly; so, don’t expect extra crispiness!) My personal trick: Make these in advance and keep chilled in the refrigerator. I have always loved huevos rancheros! I have also always adored Middle Eastern food! So, I decided to give huevos rancheros a Lebanese makeover in this lebanese breakfast scramble with pita chips. I also gave it a Jackie-approved boost of veggies, plus a kick of fun. All the ingredients are scrambled up in pan. Pops of pita chips create that fun as you rise and shine with a savory breakfast. Do enjoy it for breakfast or brunch … or whenever!

Okay, so maybe there’s a better name for this recipe. But you get the point, right? Way, way, way, WAY too much food gets wasted in America! But there’s no need to waste food when you can savor it! My philosophy: Use veggie scraps and “make a hash, not more trash!” It’s a wonderful and environmentally-conscious way to enjoy vegetables in the morning (or anytime). Perfect for a Meatless Monday! Here I simply included leftover veggies that I had on hand from recipe testing, which was about one-half cup each of chopped red onion, green bell pepper (I used the ribs and seeds, too), zucchini, and cherry tomatoes. This recipe also offers a delicious opportunity to play with all parts...

My newest cookbook, The All-Natural Diabetes Cookbook, 2nd edition, is here … perfect timing for American Diabetes Month! Each recipe in the book is ideal to be enjoyed by people with diabetes, prediabetes, heart health issues, or simply looking to improve their diet. Click here for more about it. I can’t wait for you to take a taste! Enjoy this “sneak peek” recipe to get your day started right: Blanco Huevos Rancheros. This version is an egg whites-only dish since yolks are not always included in certain diets for people with diabetes. Plus, using all egg whites here helps me to keep this recipe calorie-friendly while including other tasty, nutritious, yet rich ingredients, such as avocado and cheese. It’s a...
