If you’re a fan of bacon but no longer eat eat or want something a bit better for your body, then these plant-based portabella bacon strips are a must try! They’re basically just thinly sliced portabella mushroom caps, tossed with olive oil, spices, sea salt, and natural sugar, and then baked until crisp. The best part … these strips really do taste like bacon in a real food way. No “faux” meat here!

I was recently asked by someone with diabetes if I had a lower-carb version of a hash brown patty. I didn’t at that time, but now I do! These cauliflower hash brown patties are the delicious result—-with cauliflower swapped in place of potato. These patties do get nicely browned and a slight bit crisp. (These are not deep fried in order to keep them calorie-friendly; so, don’t expect extra crispiness!) My personal trick: Make these in advance and keep chilled in the refrigerator. I have always loved huevos rancheros! I have also always adored Middle Eastern food! So, I decided to give huevos rancheros a Lebanese makeover in this lebanese breakfast scramble with pita chips. I also gave it a Jackie-approved boost of veggies, plus a kick of fun. All the ingredients are scrambled up in pan. Pops of pita chips create that fun as you rise and shine with a savory breakfast. I don’t know about you … but when butternut squash is in season, I love finding ways to include in meals at least a few times a week! So here’s my latest recipe–seasonal butternut squash hash browns. It features this crave-worthy veggie. It’s a colorful and scrumptious twist on hash browns. Make it for breakfast and pair it with plant-based eggs. Think beyond breakfast, too. Serve it as an any day (or Meatless Monday!) side. If you have leftovers, they reheat just fine. Toss with pasta and goat cheese for an intriguing entrée. Or stuff them into tortillas along with refried vegetarian beans and avocado for a seasonal burrito. Enjoy!
