I’m nuts about nuts! I actually have over a dozen jars filled with various nuts on my kitchen island so that I can grab a handful anytime for any reason. During the fall, I find myself reaching for super nutritious pecans most often since they’re super versatile and pair so well with seasonal foods, like butternut squash, pumpkin, apples, and pears. I love them as the star of the show, too. That’s what this recipe is all about.

The pecans are glazed with a just-right sweetness from coconut nectar. You can use pure maple syrup, if you prefer. The pumpkin pie spice provides that distinctive pumpkin pie-like flair, of course. And the pinch of sea salt punches up taste and provides balance for the sweetness. A handful of these pecans makes a delightful snack. They’re also ideal for tossing into salads or sprinkling onto so many seasonal dishes. Hope you make a batch or two … soon!

Yield: 2 servings

Serving size: 1/4 cup each

 

INGREDIENTS

  • 1/2 cup pecan halves
  • 1 tablespoon coconut nectar
  • 1/4 teaspoon pumpkin pie spice
  • pinch of sea salt (a generous pinch!)

DIRECTIONS

  1. Line a plate with unbleached parchment paper. Fully preheat a cast iron or other stick-resistant skillet over medium heat.
  2. Add the pecan halves, coconut nectar, pumpkin pie spice, and salt to the skillet. Cook while stirring until the pecans are caramelized (browned), well-coated, and sticky, about 3 1/2 minutes.
  3. Transfer the candied pecans in a single layer onto the parchment paper-lined plate. Set aside to cool and crisp.

 

Per serving: 210 calories, 18g total fat, 1.5g saturated fat, 0g trans fat, 0mg cholesterol, 80mg sodium, 14g total carbohydrates, 3g dietary fiber, 9g total sugars includes 8g added sugars, 2g protein

  • No processed white sugar is required. Try coconut nectar for natural sweetness.
  • For an intriguing twist, add pumpkin pie spice.
  • Don’t forget the pinch of sea salt to balance sweetness.
