If you don’t already have a favorite fattoush salad, you need this fattoush with heirloom tomatoes in your life. It’s fresh, vibrant, and even fun. And for me, it’s quite comforting. I know, I know! Leafy salads aren’t usually thought of as comforting. But it is for me since fattoush is the first salad I ate as a child. And it’s the only one I actually liked until I was a teen and started to experiment with “diet” salads. (Yikes!)

When fresh figs are in season, it seems like I put them in practically everything I prepare. I simply adore them! And I was lucky enough to attend the California Figs new cookbook launch event in New York, and came home with a stash of the luxurious fruits. So, of course, I went immediately into my kitchen to whip up some fig-filled delights. This 100% plant-based (Meatless Monday-friendly!) flatbread pizza is the first creation from the stash. Combining two of my favorite things—pizza and figs—is downright dreamy to me. Plus, the use of creamy cashew cheese and a finish of a spicy coconut nectar and fresh basil make it magical.  Hope you agree!

Cheesy pizza is a food that I simply don’t think I could live without! Luckily, as long as it’s not loaded up with greasy pepperoni and sausage, it can be good for you. And if you top it with plenty of vegetables, it can be extra good for you. That’s what I’ve done here with a luscious-tasting spinach-artichoke topping that was inspired by spinach-artichoke dip!
