LEBANESE SPICE MAGIC
The complex flavor of these kebabs comes mostly from the aromatic Lebanese spice blend. Cinnamon, cumin, garlic, and a hint of both smoked paprika and allspice combine to create a deep, rich flavor that transforms mild cauliflower into something quite memorable, even joyful.
High-temp roasting caramelizes the outside of the cauliflower florets, while they remain comforting and tender inside. The finishing touch is a sprinkle of nutritional yeast, adding a pop of “cheesiness” and umami flavor without dairy. And an herbal sauce called Zhoug.
QUICK & EASY PREP
Though complex in flavor, these cauliflower kebabs are not complex to cook.
Simply toss cauliflower florets with extra-virgin olive oil and partially roast in a 450°F oven for 15 minutes.
Then thread the florets onto skewers, brush with more olive oil, and sprinkle with Lebanese Spice Mix.
Return to the oven until well caramelized, for another 12 minutes.
To finish, top with nutritional yeast, a generous drizzling of Fresh Zhoug (see my recipe), and sliced scallions.
To add a bonus splash of color, garnish with red pepper thinly sliced, grape tomatoes halved, pomegranate arils, and/or lemon zest if you like. And if you prefer to serve these kebabs as party apps, simply use mini skewers and prepare bite-sized servings. They will disappear in minutes!

1 large head cauliflower, cut into large bite-size florets (20 ounces florets)
Preheat the oven to 450°F. Line a large, rimmed baking sheet with parchment paper or a silicone baking mat.
Toss florets in a large bowl with 2 tablespoons of olive oil. Transfer to a single layer on the baking sheet. Bake for 15 minutes to slightly soften.
Let stand for 5 minutes or until cool enough to handle. Insert florets onto four (10-inch) skewers. Brush cauliflower florets with remaining 2 tablespoons olive oil and sprinkle with the Lebanese Spice Mix. Bake until caramelized (browned), about 12 minutes more.
Sprinkle with the nutritional yeast, drizzle with Fresh Zhoug (or serve on the side), and sprinkle with scallion. Enjoy while warm.
If using bamboo/wooden skewers, cover the handles (or the bottom part that you hold onto) with foil to prevent burning. No need to soak the skewers in advance.
For an appetizer, use smaller skewers (about 6 inches) to make 8 kebobs.
If desired, add a garnish, like pomegranate arils, sliced grape tomato, or extra-thinly sliced red hot pepper for a pop of color.
