Description
Hello comfort food season! Nothing says comfort quite like a rich, velvety sauce that bridges the gap between classic Italian flavors and cozy winter-time vibes. So meet The Best Creamy Pumpkin Marinara Sauce Recipe. This velvety sauce is likely to become your new favorite kitchen obsession… a magical blend that transforms an ordinary pasta night into something beyond the ordinary. You’ll love the robust taste of marinara softened by the silky earthiness of pumpkin. Plus, it’s got a hint of garlic and subtle nutty undertone from cashews. Ultimately, it’s both indulgent and nourishing. The best of both food worlds!
Ingredients
- 1 cup low-sodium vegetable broth
- 3/4 cup canned organic pumpkin
- 1/2 cup your favorite marinara sauce (I use Rao’s Homemade Sensitive Marinara)
- 1/3 cup unroasted unsalted cashews (1.75 ounces = 1/3 cup)
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons organic balsamic vinegar
- 2 large garlic cloves, minced
- 1 1/4 teaspoons sea salt, or to taste
Instructions
- Add all ingredients to a blender and puree until velvety smooth, at least 1 minute on high speed. (No pre-soaking cashews required!) Adjust seasoning to taste.
- Simmer and serve with pasta—or anything! If not using right away, store in a sealed jar in the fridge for up to 4 days.
Notes
If enjoying this sauce with pasta, sprinkle with fresh basil, toasted pine nuts, and hot pepper flakes for a delicious entrée.
