There’s no problem meeting fruit servings when you can sip them like this. Rather than making a daiquiri that’s loaded with alcohol and added sugar, here’s a gently spiked “adult beverage” and loaded with seasonal fruit. This ginger cherry, berry & watermelon daiquiri perfect for the poolside, a backyard BBQ, or any time you just wanna chill out. Sure, even in the morning, if you like. Move over mimosa!

Makes 4 servings: 1 (6 1/2-ounce) drink each

Ingredients

  • 2 fluid ounces 80-proof white rum (1/4 cup)
  • Juice of 1 lime (2 tablespoons)
  • 2 cups cubed seedless watermelon
  • 1 cup pitted Bing (sweet) cherries, frozen
  • 1/2 cup berries of choice, frozen
  • 1 tablespoon all-natural (100% fruit) raspberry fruit spread
  • 1 1/2 teaspoons grated fresh ginger root

Directions

  1. Add the rum, lime juice, watermelon, cherries, berries, fruit spread, and ginger to a blender container. Puree.
  2. Pour into chilled glasses, garnish each glass rim with a berry, if desired, and serve immediately.

Per serving: 100 calories, 0g total fat, 0g saturated fat, 0g trans fat, 0mg cholesterol, 0mg sodium, 17g total carbohydrate, 2g dietary fiber, 13g sugars, 1g protein

 

Jackie’s Culinary Nutrition Tips!

  • Being lighter handed with rum is one way to lighten up a daiquiri or other cocktail—just bump up other calorie-friendly ingredients so your drink size doesn’t shrink
  • Stick with 80-proof spirits rather than going for the fancier 100; higher proof doesn’t mean a drink will taste better, but it will have more calories.
  • Whenever possible, rely of fruit for sweetness rather than added sugar; for extra sweetness, consider a touch of 100% fruit spread, when needed
  • To get more zing in a fruity drink, try fresh gingerroot
  • Choose fresh fruit that’s in season to make sure it’s at its peak of ripeness, flavor, and nutritional value … then freeze what you need for frozen drink making
