Ninety percent of the time I choose savory over sweet food. Though there’s that 10%!  And when I have that craving for something sweet, I enjoy indulging in a creamy chocolaty dessert. When the weather is sizzling hot, I usually don’t want to add to the heat of the day by baking a pie.

So meet “frozen chocolate cream pie martini!” It’s a summertime experiment of mine inspired by chocolate cream pie. It’s a cross between a pie, milkshake, and martini. Yes, there’s vodka lurking in it! Multiply the recipe as needed. Cheers!

Ingredients

  • 1 cup plant-based chocolate frozen dessert (vegan ice cream)
  • 2 tablespoons plain unsweetened almond or cashew milk beverage
  • 1 tablespoon vanilla-flavored vodka
  • 2 tablespoons organic or natural vegan chocolate graham cracker or cookie crumbs
  • 1 navel orange wedge
  • 1 tablespoon plain unsweetened plant-based Greek-style yogurt
  • 1/4 teaspoon coconut nectar or agave nectar
  • 1/8 teaspoon pure vanilla extract
  • 1 fresh sweet cherry

Instructions

  1. Add the frozen dessert, plant-based milk, and vodka to a blender. Cover and puree.
  2. Pour into a sturdy martini or other cocktail glass (not into crystal) and freeze at least 4 hours (or up to 24 hours in advance).
  3. When the beverage is frozen solid, pour the chocolate graham crumbs onto a small shallow dish. Rub the orange wedge around the edge of the martini glass. Dip the edge into the crumbs until the rim is well coated. (Note: Only a portion of the graham crumbs will adhere to the glass.)
  4. In a small bowl, whisk together the plant-based yogurt, nectar, and vanilla until well combined. Dollop onto the frozen beverage, top with a cherry, and enjoy with a small spoon.
