I adore nutritional yeast flakes (aka “nooch”)

I adore nutritional yeast flakes (aka “nooch”) for providing that “oomph” to many of my plant-filled recipes. 💚 It’s one of the key not-so-secret ingredients to my vegan pesto sauce, savory popcorn topping 🍿 & cashew cheese! If you haven’t made cashew cheese before, do it! 👍🏼 Here’s an easy recipe! 😋

Simple Cashew Cheese
• 1 cup unroasted, unsalted cashews
• 2 cups + 3 Tbsp cold water, divided
• Juice of 1 small lemon (2 Tbsp)
• 2 1/2 tsp nutritional yeast flakes
• 3/4 tsp sea salt

1️⃣ In a lg jar in the fridge, soak cashews in 2 cups H2O for 12+ hrs (or overnight). Drain well.
2️⃣ In a blender, puree drained cashews, 3 Tbsp H2O (or as needed), lemon juice, nutritional yeast & salt on high speed until thick & creamy, about 3 min.
3️⃣ Chill the cashew cheese in the fridge for up to 2 weeks. It’s a crave-worthy pasta topping! Makes 4 servings.

What’s your favorite way to nibble on seasonal corn on the cob? 🌽 Mine is to cut it off the cob & enjoy it in this pan-charred corn, orzo & arugula salad! 🥗 I created this recipe after being inspired by a salad I fell for (I basically licked the bowl clean!) on a trip to the Hamptons—& have now been making it for years! ⛱️ It’s a memorable one! 💚

🍃pan-charred corn, orzo & arugula salad
Makes 6 servings
· 8 oz dry orzo of choice
· Juice of 1 small lemon
· Juice of 1 lime
· 3 Tbsp evoo, divided
· 3/4 tsp sea salt, divided
· 1/2 tsp freshly ground black pepper
· 1 Tbsp avocado oil or olive oil
· 2 cups fresh (or frozen thawed) organic yellow corn kernels
· 4 scallions, thinly sliced
· 5 oz packed baby arugula or mixing
· 3 Tbsp chopped fresh cilantro

1️⃣ Cook orzo per package directions.
2️⃣ Meanwhile, whisk lemon & lime juices, 2 Tbsp of evoo, 1/2 tsp each of salt & black pepper in a large bowl.
3️⃣ Drain orzo. Stir hot orzo into the citrus vinaigrette. Set aside to slightly cool.
4️⃣ Heat avocado oil in a large stick-resistant skillet over med-high. Add corn & remaining 1/4 tsp salt & sauté until corn begins to brown, ~5 min. Add white part of scallions & continue to sauté until corn is well caramelized (“pan-charred”) & scallion whites are lightly caramelized, ~5 min more. Stir into orzo mixture.
5️⃣ Chill orzo-corn mixture in fridge until cool.
6️⃣ When ready to serve, stir in arugula, cilantro, green part of scallions & remaining 1 Tbsp evoo. Adjust seasoning & serve! 😋
