Meet my quick-fix Mexican caramelized rice and veggie skillet! Think of it kind of like veggie-loaded fried rice, but with a Mexican-ish instead of Asian-style twist. It’s a one-skillet dish that I’ve been making (and devouring!) regularly this month, especially as a post-workout meal since it’s rich in good carbs along with a decent punch of protein. However, if you prefer to curb carbs a bit, simply use riced cauliflower as a swap for brown rice. Either way, it’s a deliciously satisfying dinner for one (or side dish for two, if you wish).

Risotto is a comfort food that I adore—especially as the weather turns colder. But whole grain risotto is not easily found on restaurant menus. So this is one dish I prefer to make at home. And seasonal pumpkin and sage risotto is definitely at the top of my list! Sorry in advance to risotto traditionalists! But since classic preparation of risotto can take patience, I’m sharing with you my cheater version!  Simply use short grain brown rice for an excellent risotto-style entrée that’s easier and more intriguing than the conventional version. Luckily, this kind of cheating is a good thing! The short grain rice provides a perfectly sticky texture that’s ideal for risotto making.

Some people might be surprised to hear that I approve of culinary shortcuts … at least on occasion! However, I am particular about what those quick picks are. For me, it still needs to be 100% “real.” One fast fix that I’m a fan of is 90-second brown rice. That sure beats the 50 minutes that this whole grain food can take.
