My newest, really tasty, delightfully messy, totally comforting obsession is this pasta with sumac chickpeas, spinach, tomatoes and creamy mint-tahini sauce! It’s got plenty of creaminess with a variety of colors and textures. And it’s full of Mediterranean flavors. I find it kind of addictive (in a healthy way, of course)!

peach melba-inspired salad

I’ve got a cool new salad for you … a Peach Melba-Inspired Salad, that is! It’s kind of like a savory interpretation of peach melba, which is a classic dessert featuring peaches, raspberry sauce, and vanilla ice cream. In other words, it’s a leafy salad starring peaches in two ways, whole raspberries and, instead of scoops of ice cream, balls of plant-based cheese. It’s dressed with a lovely peach vinaigrette that I make with Karuna JOY-D Whole Plant Juice. Altogether, it’s fresh, vibrant, and aromatic … and fun to fix.

If you don’t already have a favorite fattoush salad, you need this fattoush with heirloom tomatoes in your life. It’s fresh, vibrant, and even fun. And for me, it’s quite comforting. I know, I know! Leafy salads aren’t usually thought of as comforting. But it is for me since fattoush is the first salad I ate as a child. And it’s the only one I actually liked until I was a teen and started to experiment with “diet” salads. (Yikes!)
