Slurping down a cocktail never tasted so nutritious! This summery green smoothie cocktail is perfect for a summer weekend—or simply as an “adults only” accompaniment for a casual brunch or dinner. Healthy sipping!

Ingredients

  • 3/4 cup ice cubes (about 5 large cubes)
  • 2 large fully-ripened organic peaches, unpeeled, pitted and cubed*
  • 1 cup chopped unpeeled organic English cucumber
  • 3/4 cup packed fresh organic baby spinach
  • 2 tablespoons packed fresh mint leaves
  • 2 ounces 80-proof vodka (1/4 cup)
  • Juice of 1/2 lemon (1 1/2 tablespoons)
  • 1 teaspoon coconut nectar or agave nectar
  • 3/4 teaspoon grated fresh ginger root

Instructions

  1. Add ice to a blender. Cover and crush. Add all remaining ingredients. Cover and puree well on high speed, at least 2 1/2 minutes.
  2. Pour into two cocktail glasses

Per serving: 160 calories. 0.5g total fat, 0g saturated fat, 0g trans fat, 0mg cholesterol, 15mg sodium, 23g total carbohydrate, 3g dietary fiber, 18g total sugars, 2g protein

*Peel peaches if (1) you’re not using a high-speed blender, since peach skin may not puree well, or (2) you prefer a lovelier green color. But remember that there’s fiber in the fuzzy skin, plus using it prevents food waste!
