Ingredients

  • 3/4 cup finely diced fresh pineapple
  • 3/4 cup finely diced fresh English cucumber with peel
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, extra-thinly sliced crosswise or minced
  • Juice of 1/2 lime (1 tablespoon)
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ground coriander
  • 1/8 teaspoon ground cumin


Instructions

  1. Stir together all ingredients in a small bowl.
  2. Serve or cover and chill for up to 3 days.
