- 3/4 cup finely diced fresh pineapple
- 3/4 cup finely diced fresh English cucumber with peel
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, extra-thinly sliced crosswise or minced
- Juice of 1/2 lime (1 tablespoon)
- 1/8 teaspoon sea salt
- 1/8 teaspoon ground coriander
- 1/8 teaspoon ground cumin
Instructions
- Stir together all ingredients in a small bowl.
- Serve or cover and chill for up to 3 days.
