Loosely inspired by the candy version of peppermint patties, these cocoa-peppermint power patties give you all of the chocolatey and pepperminty flavors you desire. Plus, you can feel good about indulging in them!

How to make

These energy bites are so simple to fix. Just whirl together all ingredients – dates, hemp seeds, pistachios, almond butter, cocoa powder, vanilla extract, peppermint flavor, and sea salt – in a food processor. Then form into balls and flatten into patties. Or, if you prefer, shape into logs, bars, or your favorite holiday-inspired shape –- or simply keep them as balls.

How to eat

Enjoy one or two of them after a workout, as an anytime snack or dessert, whenever you need to satisfy a chocolate craving, or even as a breakfast on-the-go. Yep, really … they’re based on 100% wholesome dried fruit, seeds, and nuts, after all!

As a treat

These patties are naturally sweet! But it you need bonus “sweet tooth” satisfaction, you can transform these patties into a really special dessert by dipping them into or drizzling them with melted bittersweet and/or plant-based white chocolate. And, for an extra holiday-themed treat, sprinkle with crushed organic candy cane.

Yes, you can transform these patties into candy … the good-for-kind that’s soooo scrumptious! Don’t you love it when a recipe multi-tasks like this?

Whirl up all ingredients for the patties in a food processor. Then, instead of forming them into patties, press the mixture to form a 6-inch square on a silpat-lined small baking sheet. Freeze for 10 minutes. Then transfer the square slab directly onto a cutting board and cut into 36 mini squares. Drizzle and smear with 6 ounces melted vegan bittersweet chocolate (combined with 1 teaspoon coconut oil, a few drops of teaspoon peppermint extract or flavoring and a pinch of sea salt), letting the chocolate drip slightly down the sides of each bite. Finally, sprinkle with sea salt flakes.

Description

Loosely inspired by the candy version of peppermint patties, these cocoa-peppermint power patties give you all of the chocolatey and pepperminty flavors you desire. Plus, you can feel good about indulging in them!


Ingredients

  • 6 ounces dried pitted dates (the moister the better)
  • 1/3 cup shelled hemp seeds
  • 1/3 cup shelled salted roasted pistachios
  • 1/3 cup natural creamy almond or cashew butter, no sugar or salt added
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon pure vanilla extract
  • 3/4 teaspoon organic peppermint flavor (non-alcoholic)
  • 1/8 teaspoon fine sea salt


Instructions

  1. Blend all ingredients in a food processor on low speed until well combined, but mixture still has some texture.*
  2. Extra-firmly squeeze and roll mixture by hand into 12 balls, about 2 tablespoons (32 grams) mixture each. Then flatten into patties.
  3. Ideally stash in the fridge for 1 week or freezer for 2 months. These are also awesome as on-the-go snacks — no refrigeration required for up to 1 day.

Notes

*Note: If necessary, add vanilla unsweetened plant-based milk by the teaspoon to achieve desired rollable consistency. However, if the dates you use are moist, there should be no need to add any plant-based milk!
