mexican-style cauliflower rice

by Jackie Newgent  |  July 27, 2021  |  3 Comments
If you want to make your side dish as special – or more special – than your entrée, you’ll want to sauté up this Mexican-style cauliflower rice! And you guessed it … there’s actually no rice in it. This recipe features cauliflower that’s pulsed into the shape of rice kernels. That means it’s lower in calories and carbs and higher in fiber than when using regular rice … if that’s important for you. While I recommend both rice (especially brown rice) and cauliflower, having options is always a smart idea.

If you’re a fan of bacon but no longer eat eat or want something a bit better for your body, then these plant-based portabella bacon strips are a must try! They’re basically just thinly sliced portabella mushroom caps, tossed with olive oil, spices, sea salt, and natural sugar, and then baked until crisp. The best part … these strips really do taste like bacon in a real food way. No “faux” meat here!

rosemary roasted potato “chips” with truffle hot sauce

by Jackie Newgent  |  January 17, 2021  |  0 Comments
These rosemary roasted potato “chips” with truffle hot sauce are my answer to comforting, “un-fancy” food right now! They’re the extra-tasty result of jumbling up the concepts of truffle fries, thick-cut potato chips, and rosemary roasted potatoes. Even though they’re roasted, not fried, they’re still oh so indulgent; so perhaps don’t eat them at every single one of your meals. Try your best to share them, too. (I admit, I’m not so good with that!) And be sure to look for a bottle of truffle hot sauce (OK, so that’s a little fancy!) to drizzle them with (try these brands: The Truffleist or TRUFF) — that’s my absolute favorite part! While the sauce is pricey, it lasts a long, long...

two-ingredient berry mustard

by Jackie Newgent  |  December 28, 2018  |  2 Comments
I like traditional mustard. But I looove fruity mustard. Luckily, it’s super easy to make it yourself. It literally takes seconds to fix. You’re definitely going to want to try this two-ingredient berry version. Enjoy it as a condiment of choice for meatless or no-so-meatless burgers or cheesy sandwiches. Use it as a dipping sauce in place of honey mustard. Or try it as a topping for grilled fish or poultry. Yep, it’s quite versatile. By the way, you can transform this recipe into an intriguing three-ingredient condiment by adding 1/2 teaspoon of minced fresh herbs, such as basil, rosemary, or tarragon. Whether you opt for the two- or three-ingredient version, do plan to enjoy it often!

pomegranate-smashed butternut squash

by Jackie Newgent  |  November 25, 2018  |  3 Comments
If you haven’t tried it yet, pomegranate juice makes a clever culinary liquid, not just a beverage — and it’s delightful in this pomegranate-smashed butternut squash recipe. In late fall and all winter long, I love using a combination of pomegranate juice and arils in cooking to add rich color, antioxidants, and naturally-derived sweetness with a hint of tartness. Pomegranate and butternut squash are a perfect pairing, too. To save time here, simply use butternut squash that’s already cubed for you. You’ll toss the cubes with olive oil, then with pomegranate juice, salt, and pepper. Cover it up, bake for 50 minutes, mash, and voila! Oh, and don’t forget to top with chives and pomegranate arils for extra pops of...
