One of my favorite anytime salads is this … baby arugula and pan-grilled grape salad with cashew cheese balls, toasted sliced almonds, and lemony-pepper grilled grape vinaigrette. Not only does it have one of the longest salad names ever, it’s seriously one of the tastiest ever. Luckily, so it won’t be so difficult to remember the name of this, I gave it a shortened-up nickname: “anytime arugula and grilled grape salad!” That better?!

peppery romano “fried” zucchini chips

When served on an appetizer menu, zucchini chips sound like they may be healthier than some other options. Unfortunately, the zucchini acts like a mop and soaks up oodles of oil in the process of being fried. It’s usually served with a dip or sauce, too. So even though you do get some vegetable benefit, the greasy app can be associated with over a meal’s worth of calories. In my version of zucchini chips, the focus stays on the zucchini. The coating includes a crispy combination of Romano cheese and whole-wheat Panko breadcrumbs. They get deliciously browned by baking (aka “oven-frying”); no deep frying is required. For extra pep, a generous amount of freshly ground black pepper is the key....

grilled avocado-poblano egg salad sandwich with rosemary

Makes 4 servings: 1 sandwich each Though grilling is a most popular in summertime, I find I cook out more during the fall. But I like to mix things up a bit and not stick to the tried and true. Here’s one of those not-so-tried-and-true results. It’s an egg salad sandwich gone mad … in a very tasty way! Not only did I grill the eggs, I grilled avocado and Poblano and combined them all together for an unexpected sandwich bursting with flavor, texture, and smoky intrigue. The fresh rosemary is the perfect accent for it. You can use an indoor grill or grill pan, if you prefer. Hope you enjoy it soon–whether cooking out or in. Calories Saved: 130
