anytime arugula and grilled grape salad

One of my favorite anytime salads is this … baby arugula and pan-grilled grape salad with cashew cheese balls, toasted sliced almonds, and lemony-pepper grilled grape vinaigrette. Not only does it have one of the longest salad names ever, it’s seriously one of the tastiest ever. Luckily, so it won’t be so difficult to remember the name of this, I gave it a shortened-up nickname: “anytime arugula and grilled grape salad!” That better?!

One of my first original food creations that I was so proud to show off as a kid was potato chip and bologna canapés. Yes, that’s little rounds of bologna on top of potato chips. As much as I’d like to say that the recipe stood the test of time, it’s definitely not part of my recipe repertoire anymore. But I still love making canapés. I created this plant-based, party-ready version one day out of edible odds and ends I had on hand … and it’s now one of my favorites. I prefer to call them crostini rather than canapés since it seems friendlier. I think my younger self would give this two thumbs up. Hope you enjoy its just-right...

mexican-inspired seven layer dip

(Click on photo for full-size image!) Makes 16 servings Super Bowl party, anyone? Or maybe an Oscar soiree? Whether you’re hosting a gathering or going to one, here’s an app that’ll disappear before the end of the evening. It’s basically a Mexican layer dip with a few new twists. Frankly, I make dip for casual get-togethers more often than anything else because they’re always crowd pleasers. This is my newest translation. The grapes on top … love! And the quark in it will surely raise some eyebrows. (Quark is simply a fresh European-style cheese that’s like a super creamy cottage cheese.) Let me know if your dip gets demolished!
