cauliflower “hash brown” patties

I was recently asked by someone with diabetes if I had a lower-carb version of a hash brown patty. I didn’t at that time, but now I do! (These are not deep fried in order to keep them calorie-friendly; so, don’t expect extra crispiness!) My personal trick: Make these in advance and keep chilled in the refrigerator. Then over the next several days, quickly heat the number of patties that you need. Reheat in a toaster oven … or even a regular toaster! Though I skip them since I prefer to spend my calories elsewhere. Now here’s a way for us all to partake in their party popping goodness in a veggie friendly way. These  wings are made with cauliflower. They’re boneless too, of course. I heard about some folks doing this, but I needed to try it out for myself in my own culinary style.  They won’t taste like chicken (since there’s no chicken in them), but they are every bit a spicy hot bite. Definitely worth a try! Calories...

cara cara pilaf with almonds & pistachios

(Click on photo for full-size image!) Makes 2 servings: 3/4 rounded cup each Some people might be surprised to hear that I approve of culinary shortcuts … at least on occasion! That sure beats the 50 minutes that this whole grain food usually takes. But then I take this fast side and stir simple yet lovely accents into it. Here, it makes it seem like you spent an hour preparing an enticing dish, not just a few minutes! The Cara Cara, which is also known as a red navel...
