cauliflower “hash brown” patties

I was recently asked by someone with diabetes if I had a lower-carb version of a hash brown patty. I didn’t at that time, but now I do! Here’s the delicious result—-with cauliflower swapped in place of potato. These patties do get nicely browned and a slight bit crisp. (These are not deep fried in order to keep them calorie-friendly; so, don’t expect extra crispiness!) My personal trick: Make these in advance and keep chilled in the refrigerator. From Thanksgiving through Christmas, you can usually find me baking up some goodies or watching romantic holiday movies—or both! Luckily, the Recipe Redux theme this month is “Creative Quick Breads”; so it’s the perfect excuse for me to create a new fresh-from-the-oven treat. This inspired recipe is like a glammed up pumpkin bread. It’s heavy on chocolate, but not on calories. It has a just-right amount of sweetness. As a bonus, it’s vegan. I just turned another year older, so I baked cupcakes to celebrate. Birthdays do only come once a year, after all! However,  to make sure the desserty treats were at least a tiny bit better for everyone to enjoy, this cupcake recipe uses whole-wheat pastry flour and chia seeds. vegan chocolate chip cookies

(Click on photo for full-size image!) Makes 28 servings: 1 cookie each It’s ice cream season! Other than hot fudge sauce, the best pairing to me is chocolate chip cookies. And these perfectly-sized cookies will please everyone. They’re just 100 calories each, vegan, chewy, and absolutely yum! The key is baking them about 1 minute longer than you think you need. The “browner the better” is the baking philosophy for this recipe. Serve one with a scoop of plant-based frozen dessert if you like, too. And now I have 28 … I mean 26 1/2 cookies left to enjoy!
