At the end of a long day, sometimes cooking up a quick pot of pasta doesn’t seem speedy enough—and a packaged frozen entrée doesn’t sound appealing enough. That’s where this fast make-ahead fusilli pasta bowl fix comes in. It’s my go-to pasta bowl of the moment. I pair whole grain fusilli with a good-quality marinara sauce, plus some of my favorite ingredients: baby arugula, goat cheese, pistachios, and lemon zest. Yum!

So as part of her internship experience, I asked her to create a recipe makeover for Meatless Monday. Here’s her story behind this recipe. grilled sharp cheddar cheese panini with cranberry mustard and arugula

The grilled cheese sandwich has been around ever since I’ve been around. Though I always called it “toasted cheese” as a kid. The classic version of this popular sandwich is traditionally made with pasteurized process cheese food, sometimes known as American singles. It’s unfortunate since this type of “cheese” is only required to contain 51% real cheese. Yikes! So here’s my updated version of the classic grilled cheese, accessorized with flavorful ingredients, including a cranberry mustard and fresh arugula, and grilled in a panini press.
