STRAWBERRIES ETC.

1 pound organic strawberries, pitted, sliced vertically (1/4-inch thick slices)
1 tablespoon raspberry or balsamic vinegar
2 teaspoon acacia or other mild floral honey

  1. In medium bowl, gently stir strawberries with vinegar and honey. Let marinate for at least 2 hours in the refrigerator before serving.
  2. Serve at room temperature. Delicious by themselves, over frozen yogurt, or atop waffles. If desired, top with very thinly sliced fresh basil or mint.

Makes 4 servings, about 3/4 cup each
