HONEY-MINT HOT COCOA
2 tablespoons unsweetened natural cocoa powder
1/4 cup spring water (2 fluid ounces)
1 1/2 cups low-fat (1%) organic milk (12 fluid ounces)
1 tablespoon acacia or orange blossom honey
1/4 teaspoon pure vanilla extract
1/8 teaspoon pure peppermint extract
- In small saucepan, add cocoa and spring water. Cook over medium heat while whisking until mixture boils. Allow to boil for 30 seconds while whisking.
- Pour in milk. Continue to cook while whisking for 3-4 minutes, or until hot. (Note: Do not allow milk to boil.)
- Remove from heat. Stir in honey and extracts. Serve immediately in two mugs.
Makes 2 servings, about 7-1/4 ounces each
