HONEY-MINT HOT COCOA
2 tablespoons unsweetened natural cocoa powder
1/4 cup spring water (2 fluid ounces)
1 1/2 cups low-fat (1%) organic milk (12 fluid ounces)
1 tablespoon acacia or orange blossom honey
1/4 teaspoon pure vanilla extract
1/8 teaspoon pure peppermint extract
  1. In small saucepan, add cocoa and spring water. Cook over medium heat while whisking until mixture boils. Allow to boil for 30 seconds while whisking.
  2. Pour in milk. Continue to cook while whisking for 3-4 minutes, or until hot. (Note: Do not allow milk to boil.)
  3. Remove from heat. Stir in honey and extracts. Serve immediately in two mugs.

Makes 2 servings, about 7-1/4 ounces each
