| No glass or cup is required to sip this fruity beverage. It’s served right in its own grapefruit peel. Who knew going “green” could be so much fun?
2 large (16 oz each) pink grapefruits, halved
6 fl oz (3/4 cup) lemon-flavored light rum
12 fl oz (1 1/2 cups) seltzer water
1/4 cup turbinado sugar
1/4 tsp finely chopped fresh mint (optional)
- Using a reamer or hand juicer, juice the grapefruit halves directly into a pitcher through a strainer (to catch seeds).
- Add remaining ingredients into a pitcher. Stir or whisk until the sugar dissolves.
- Slice a very thin piece of peel from the grapefruit halves in order for them to stand, juiced side up like a cup. Pour 1/2 cup of the beverage into each grapefruit half peel “cup.” Drink, then refill.

Use it, Don’t Lose It
Consider other uses for citrus fruit “cups.” Make a fresh fruit salad with grapefruit in a grapefruit “bowl.” Enjoy a bulgur salad or pilaf made with freshly-squeezed orange juice from an orange “cup.” Serve a scoop of sorbet in a lemon or lime “cone.” |
