SINCE the age of three, Jackie loved to play in the kitchen. She still does. Luckily her recipes are much tastier, healthier, and greener now than her earliest creations of bologna-potato chip canapés and French fry burgers. Culinary school helped Jackie expand her repertoire of two recipes—and then some! As a chef, her specialty is making nutritious food naturally delicious. Plus, Jackie is an expert at pleasing the palate while pleasing the planet. She has perfected her own high-flavor, low-carbon cooking techniques which help save energy, such as “lid cooking” and “hyperbaking."

Her first cookbook, The All-Natural Diabetes Cookbook: The whole food approach to great taste and healthy eating, was awarded the Best Health and Nutrition Book by Gourmand World Cookbook Awards 2007! Jackie's latest cookbook, Big Green Cookbook: Hundreds of Planet-Pleasing Recipes & Tips for a Luscious, Low-Carbon Lifestyle, has received and continues to receive much media attention. And she's now busy in her kitchen working on her next cookbook (Wiley, 2012!) In the meantime enjoy some of Jackie’s delightful bites.
